Chicken Broccoli

I’ve spent most of today running like a mad woman.  This is not a surprising state as people who know me well can attest to, so today I’ll just share the recipe for our dinner.  It’s known by a lot of names, but comes down to chicken and broccoli served up in a cream of chicken based sauce and served with rice.  For a fun addition we had roasted butternut squash on the side.

What did you do for dinner?

Chicken Broccoli

2 chicken breasts cooked and diced

1-2 big heads of broccoli pieced and steamed

2 cans cream of chicken soup

1/2 cup sour cream (light)

1/2 cup mayo (light)

1/2 cup milk


Place chopped broccoli and chicken in the bottom of a 9×13 baking dish.  Combine sour cream, mayo, milk, soup and pour over broccoli and chicken.  Top with panko if desire for extra crunch.  Bake for 20-25 minutes at 400 degrees.  Serve over rice.

    • It’s one of my children’s favorite dishes. It works okay with peas as well, but the broccoli has just the right taste and texture for me. And it reheats well for lunches too!
