Crispy Chewy Snickerdoodles

I made up some snickerdoodles this past week, which were quickly and efficiently devoured by all.  These were nice cookies which had a crisp to the edges and a chewy center.  If I do them again I’m going to add a little bit of milk and go for a little chewier, but I really can’t complain.

Crispy Chewy Snickerdoodles

1/2 cup shortening
1/2 cup butter, softened
1 1/2 cups white sugar
2 eggs
1 tsp vanilla
2 3/4 cups sifted flour
1 teaspoon baking soda
2 teaspoons cream of tartar
1/2 teaspoon salt
1 tsp Ultra Gel
2 tablespoons white sugar
2 teaspoons ground cinnamon
Preheat oven to 375F.  Combine butter, shortening and sugar until well creamed, then add eggs one at a time and vanilla.  Mix until light in color and fluffy.  Combine dry ingredients and gently sift into creamed mixture.  Combine well.  In a small bowl combine 2 T sugar and cinnamon.  Form cookie batter into balls and roll in cinnamon sugar mixture before placing on cookie sheet.  Bake for 8-10 minutes or until golden brown around the edges.  For chewier cookies increase Ultra Gel to 1 Tbl and add 1 Tbl milk.
