Recently Bunneh and I have started working on improving our diet. We eat well, mind you, but sometimes it’s a bit fattier than our doctor would prefer. As part of this effort we decided to try Best Life Baking sticks in a cookie recipe. Yeah, I know they’re still cookies, but if there are ways to make our favorite foods healthier I’m totally willing to give it a try.
So today we made a chocolate chocolate chip cookie for a family celebration. I replaced the butter with Best Life Baking Sticks, decreased the sugar and swapped out the all purpose flour for 1/2 cup white rice flour, 1/2 cup cake flour and 1 cup whole wheat flour. The cookies turned out really well. The flavor is wonderful and they set beautifully.
We may manage this diet change after all.
