The Great Cookie Experiment- Chocolate-Dipped Peanut Logs
I figure that any time you have peanut butter and chocolate combined, you have a pretty good thing going on. This is definitely true of the Chocolate-Dipped Peanut Logs. They start with an amazing peanut butter cookie, which is THEN dipped in chocolate, and rolled in ground salted nuts. Yum!
As an added bonus, this recipe makes 8 ½ dozen cookies- that’s seriously impressive! It’s also impressive that we ran out of cookies as quickly as we did, given the number in the batch. We even had less people to share the cookies with because summer and vacation time took people away from our regular Saturday night gaming group!
There are a few things about making the recipe that would be helpful to know. I was stumped for a bit at the concept of rolling the dough into 2 inch logs. It doesn’t say how thick the logs should be, or how much dough you should use. I’m used to dropping cookies from a spoon, or rolling them out and cutting them into shapes, not rolling them into logs. Pretty much, take a standard sized amount of cookie dough and make it look like a tootsie roll- a yummy peanut butter tootsie roll! The recipe calls for 8 ounces of dark chocolate candy coating. Candy coating will melt easily, and if you can’t find it in the grocery stores, check the cake decorating aisle at your craft store. I didn’t use it, myself. I had dipping chocolate left over from Christmas that I needed to use up, so I had to go through the longer process of tempering it for dipping. Since you’re rolling the chocolate in the ground nuts, you’re probably fine with either product. As far as the ground salted peanuts go, you’re not going to find them ground already at the grocery store, at least I never do. I have a food chopper that I used to pulverize the peanuts to bits. It would also be fun to put them in a Ziploc bag and hit them with something hard. Like a rolling pin- the marble one.
Chocolate-Dipped Peanut Logs
1 cup creamy peanut butter (don’t cheat and use low-fat, or cheap generic stuff!)
½ cup butter, softened
½ cup shortening
1 cup sugar
1 cup packed brown sugar
2 ½ cups flour
1 ½ tsp baking soda
1 tsp baking powder
¼ tsp salt
8 oz dark chocolate candy coating
2/3 cup ground salted peanuts
In a large bowl, cream peanut butter, butter, shortening and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Combine the dry ingredients. Gradually add to the creamed mixture and mix well. Shape into 2 inch logs. Place 2 inches apart on ungreased baking sheets. Bake at 350 for 8-10 minutes or until lightly browned. Remove to wire racks. In a microwave, melt candy coating. Stir until smooth. Dip one end of each cookie into coating. Allow excess to drip off. Dip into peanuts. Place on waxed paper to set. Yield 8 ½ dozen.
