Oatmeal Peanut Butter cookies

I’m a big fan of peanut butter anything, so of course I love peanut butter cookies. These
are a fabulous cookie. The oatmeal in the dough gives the cookie a great texture and
whole grain flavor. The peanut butter is plentiful and full of flavor, unlike other recipes
I’ve had. They baked up just the right kind of chewy. THIS is the kind of cookie I would
take in the car and travel with. It’s not messy, it’s got lovely wholesome ingredients, and
it isn’t a fragile cookie that will crumble the first chance it gets.

One or two things you should consider. The dough is really very soft, and you may
have to add some flour to make it not so sticky. Flour your fork to make the criss cross
pattern, so the fork doesn’t stick. The Oatmeal makes it so that the cookie doesn’t really
get a clear criss cross on the top of the cookie. It just looks kind of lumpy. You may
be happy just squishing the cookie with the bottom of a glass and forget the criss cross
altogether.

Oatmeal Peanut butter cookies

Oatmeal Peanut Butter Cookies

2 cups oats
1 cup flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup peanuts
¾ cup butter
1 cup packed brown sugar
½ cup white sugar
2 eggs
2 tsp vanilla

Preheat oven to 350. In a mixing bowl, stir together oats, flour, baking powder, baking
soda and salt. In a separate bowl, beat peanut butter and butter until smooth. Add the
sugars, mixing well. Beat in eggs and vanilla. Add oat mixture. Shape into 1 inch balls.
Chill dough if it’s too soft to handle. Place dough 2 inches apart on greased cookie
sheets. Flatten with floured fork in a criss-cross pattern. Bake 8-10 minutes.

    • I never think of peanut butter as bad. Just as something to be indulged in in moderation. Particularly if you get natural peanut butter it’s a good source of protein without a lot of other extra crapola. 🙂
