Hey folks,

I know today is usually the Great Cookie experiment, but that’s been delayed to be the Thanksgiving Post…mostly cause then I don’t have to think about a post while I’m neck deep in piiiie.

I had the fun of being on Fresh Living for KUTV again yesterday.  It was so much fun to chat with Debbie and show some of the cool things which Ultra Gel can be used for.  I’ve had a couple of questions about the recipes from the show, so here they are.

Easy Apple Pie Filling

2/3 cup sugar or sugar substitute

1/3 cup Ultra Gel

1 tsp cinnamon

1/2 tsp nutmeg

1 cup apple

6 cups sliced blanched apples

1 pie shell

Combine dry ingredients in a medium bowl and mix well.  Add apple juice to dry ingredients and whisk to combine.  When gel is set fold in apples.  This is the completed pie filling.  Pour into uncooked crust, top and bake or use in a graham cracker crust, or as a bottom for apple crisp, cobblers, cookies…anywhere an apple pie filling is needed.  Or just warm up and serve over ice cream!

Ultra Gel Whipped Cream

1 pint whipping cream

1/2 cup powdered sugar or sugar substitue

1 tsp vanilla

1 tsp Ultra Gel

Combine whipped cream, sugar and vanilla and beat until it begins to foam.  Add Ultra Gel and whip to soft peaks.  Serve or store in the fridge for upto 5 days!

Ultra Gel Gravy – Gluten free!

2 cups combined broth and drippings from turkey or chicken (this also works great with veggie stock!)

1-2 Tbl fresh herbs

salt and pepper to taste

1/4-1/3 cup Ultra Gel

Combine all ingredients and bring to serving temperature, about 180.  There is no need to boil and Ultra Gel will whisk in most easily if the bowl or pan is not putting off a lot of steam.  Whisk in Ultra Gel until just shy of desired thickness.  Let stand for 2-3 minutes.  Thicken with more Ultra Gel or thin as needed.  Eat!  Will store in fridge upto a week, or can be poured over mashed potatoes and frozen.  The gravy will keep the air away from the potatoes, providing an awesome frozen dinner!
