Turkey Thai Inspired Lettuce Wraps

Last night was one of those nights.  You know the kind…the ones where you look through the fridge pondering what to make and nothing sounds unique enough.  It’s all just…the same things we eat all the time.  Those nights are often when I turn to some of my favorite places on the interwebs and search for inspiration.  This time inspiration was found over at Kalyn’s Kitchen.  This is a fabulous site, with a lot of easy, but yummy recipes, particularly those which are diet friendly.

The recipe which caught my eye was her Thai Inspired mini meatballs, which I got started on…then I realized I didn’t have the fish sauce for the dressing…and then my turkey didn’t want to cook through.  So I started making adjustments and ended up with an almost Thai taco, which was very yummy.  Yummy enough to do again.  So thanks for the idea and here’s my adjusted recipe.

Thai tacos

Turkey Thai Lettuce Wraps

1 lb ground turkey

1 Tbl grated fresh ginger

1 Tbl minced garlic

2 Tbl rice vinegar

2 Tbl soy sauce

2 tsp sesame oil

1 Tbl chili paste

2-3 Tbl Ultra Gel

Combine all ingredients thoroughly and let sit for five minutes for the flavors to blend and the Ultra Gel to hydrate.  (Sitting in the fridge for 30 minutes to 8 hours wouldn’t be a bad idea either.)  Brown meat mixture until there is no pinkness.  Serve in lettuce leaves with a sauce of greek yogurt.
