The Great Cookie Experiment – Chocolate Cherry Cookies

So for those of you who follow the experiments last week Julie explained how she and I both made versions of a chocolate fruit and chips cookie.  Hers was chocolate, raspberry and vanilla chips and I went for a chocolate, cherry and dark chips version.  To be honest I liked both versions, but I preferred the dark chocolate chips and would put that in either one.  Or, perhaps, try a mix of vanilla chips and dark chocolate.  Either way these are both smashing cookies, and there’s fruit in there…so at least fractionally healthy right?

Double Cherry Chocolate Cookies

3/4 cup butter

1 cup granulated sugar

1 cup dark brown sugar, packed

2 eggs

2 teaspoon vanilla

1/2 cup chopped sweet cherries

1/2 cup chopped dried cherries

1 cup all-purpose flour

1 cup wheat flour

2 teaspoons Ultra Gel

3/4 cup baking cocoa

1 teaspoon baking soda

1/2 teaspoon salt

2 cups dark chocolate baking chips (alt: 1 cup vanilla baking chips and 1 cup dark chocolate baking chips)

Cream butter and sugars in a large mixing bowl until light and fluffy. Add eggs and vanilla and beat well. In a separate bowl, combine flours, cocoa, baking soda and salt; gradually blend into creamed mixture. Fold in baking chips and cherries. Drop by teaspoonfuls onto an ungreased cookie sheet. Bake at 350 degrees for 8-9 minutes. Cookies will puff during baking and flatten as they cool. Remove from cookie sheet and cool completely on a wire rack.
