This week Bunneh found us some very nice boneless pork chops. The first thought for preparation had to do with a good frying and coating with frosted flakes, which is one of Bunneh’s absolute favorite ways to have pork chops. However, since we’re putting at least a little effort into eating better so it seemed like we should try something different. All in all everyone in the house was glad we did.
The base of this recipe is lean, trimmed, boneless pork chops which we pan fried on both sides in a little olive oil to get a good crisp. Then everything went onto a baking sheet and into the oven with a cheesy topping. Served up with brown rice and cauliflower it was a nice warming dinner on a day when the weather was cold and snowy and the hunger was on.
Baked Cheesy Pork Chops
4 boneless pork chops, trimmed
1-2 Tbl Olive oil
1/2 cup cheese (I did an Italian blend)
1 cup low fat greek yogurt
salt and pepper to taste
1-2 tsp Ultra Gel as needed
iHeat olive oil In a medium non-stick skillet. Add pork chops browning for 3-4 minutes on each side. Remove chops to a foil lined baking sheet and set aside. In a small bowl combine cheese, yogurt and spices until well mixed. Spread cheesy mix on top of each pork chop. Bake at 375 for 20-25 minutes until internal temperature registers 160. For a little more crisp turn on the broiler for 2-3 minutes to give the cheese a little extra char. Serve with baked rice and vegetables.
