The Great Cookie Experiment – Pecan Stars

 

I had to read the instructions on this recipe several times to make sure I understood what I was supposed to do to make Pecan Stars.  Things just didn’t add up.  This cookie was supposed to make 3 ½ dozen cookies using a 3 inch star cookie cutter.  But it only had you use ¼ cup of butter, and a little over a cup of flour.  I made the dough.  There wasn’t a whole lot in the bowl.  I showed it to my friends, wondering if they thought it was enough to make 3 ½ dozen.  They both very quickly said, “No way.  No way you’re getting 3 ½ dozen cookies with only that much dough.  I didn’t think so either, but it’s a Great Cookie EXPERIMENT, so I had to try.  I ended up with six regular sized cookies before switching to a 1 ½ inch star cookie cutter, and even then I didn’t even have 2 dozen cookies.  I have NO IDEA how they get 3 ½ dozen with the ingredients included.  It’s a mystery.

 

This wasn’t just a cut out cookie.  This had you cut out the cookie, put in some filling AND turn it into a 3-D display.  There wasn’t a picture of the cookie included, so I just guessed and hoped I did it right.  It was pretty.  It was also not especially sweet, but more of a sweet/salty combination.  Even though it was slightly salty, it was well received.  People who ate pecans thought they were good.   Just double the recipe if you decide to make them.  Maybe quadruple.

¼ cup butter, softened

¼ cup sugar

1 egg, beaten

1 tsp each vanilla and almond extract

1 1/3 cups flour

1 ½ tsp baking powder

1/8 tsp salt

 

Filling:

 

1 ¼ cups ground pecans

1/3 cup sugar

1 Tbl butter, melted

2 Tbl water

1 tsp salt

 

Cream the butter and sugar until light and fluffy.  Add egg and extracts.  Mix well.  Combine the dry ingredients.  Gradually add to creamed mixture.  Cover and chill 1 hour.  Roll out onto a lightly floured surface to 1/8 inch thickness.   Cut into 3 inch s tars.  Combine filling ingredient.  Place ½ tsp filling in center of each star.  Bring the five points upright; starting at base, pinch sides together so points of star stand up, allowing filling to show.  Place on ungreased baking sheets.  Bake at 375 for 6-8 minutes or until the cookies are golden brown.  Cool for 2 minutes before removing to wire racks to cool completely.  Makes MUCH less than 3 ½ dozen.
